Our eyes are forward facing, with a very narrow field of vision.  While we can detect things in our peripheral vision what we see is very vague.  However we “feel” that we see a lot more than we do because our mind builds a more panoramic picture for us.

Think of the panoramic picture Apps that you can get for smartphones.  You take a narrow picture, then turn and take another and repeat.  The App then stitches these pictures together into one panoramic picture.  For us, our eyes are constantly moving left and right and it is our brain that is stitching together the pictures but the concept is the same.

If the Earth is a sphere the horizon will be about 3 miles (assuming no atmospheric conditions that cause diffraction).   As you turn 360 degrees the horizon will always appear 3 miles away, and at the same eye level so obviously It will always appear level as you turn.  Just as it would if you used a panoramic photo App.

The same logic applies even at a height of 40,000 feet because the earth is so big.  You can see the curvature of the earth in NASA pictures not because they are fake, but because they are at a much much higher altitude.  E.g. the International Space Station is at an altitude of 240 miles.

Here are a couple of interesting tests you can do yourself to experience how what you think you see in your peripheral vision is largely an illusion created by your brain.  Make sure that you expand the videos to full screen.

In the following video first note that shapes are only fairly regular hexagons in the centre of the image.  However when you concentrate on the centre after a little while you will loose awareness that
the shapes further away from the centre are irregular.  This is because you are "seeing" what your mind is filling in for you not what is actually being picked up by your eyes. 



The following effect is a little easier to see.  In this video each of the pink ovals in a circle disappear and reappear in turn, so the "gap" moves around the circle.  If you concentrate on the centre you start to see a green oval instead of a gap, and after a while longer I found that the pink ovals faded from view and I mainly saw a green oval moving around in a circle.
